    Lemon Chicken Sausage With Rice Pasta

    1 large yellow onion, thinly sliced

    3 Spicy Chicken Sausages (or regular chicken sausage, if preferred)

    8 oz Cremini mushrooms (or a mix of cremini and shiitake for a more complex flavor), sliced

    4 cups fresh spinach (or baby spinach)

    2-3 lemons (zest and juice)

    1/4 cup Parmesan cheese, freshly grated

    1/4 teaspoon red pepper flakes (adjust to taste)

    8 oz rice pasta (or any pasta of choice)

    2 cloves garlic, minced

    1/4 cup dry white wine or chicken stock (optional but recommended)

    2 tablespoons unsalted butter

    Salt and pepper to taste

    Olive oil for sautéing

    Fresh parsley, chopped (for garnish)

    Cook pasta: Boil salted water. Cook pasta until al dente (9-11 min), reserve 1/2 cup pasta water, then drain and set aside.

    Caramelize onions: Sauté onions in olive oil over medium heat for 10-15 minutes until golden. Set aside.

    Cook sausage and mushrooms: Brown whole sausages in the same pan, remove, slice, and return to pan. Add mushrooms and cook until browned, about 5 minutes.

    Add garlic and deglaze: Stir in garlic and red pepper flakes for 1 minute. Deglaze with white wine or chicken stock, scraping up the browned bits. Simmer for 2-3 minutes.

    Add spinach and lemon: Stir in spinach until wilted. Zest and juice lemons into the pan, seasoning with salt and pepper.

    Combine: Toss in cooked pasta with reserved pasta water, butter, and Parmesan. Stir until creamy, adding more water if needed.

    Garnish: Serve with extra Parmesan, parsley, and a squeeze of lemon.
