    Loaded Chicken Twice Baked Potato

    Ingredientes

    3-4 Russet Potatoes

    Heavy Cream

    Colby Jack Cheese

    Seasonings for taste (in step list)

    Sharp Cheddar Cheese

    Unsalted Butter

    Vegetable Oil

    Broccoli (optional for filling)

    Aluminum Foil

    Garlic Paste

    Sour Cream

    Olive Oil

    Cubed Chicken (cut up breasts or tenderloin)

    Instruções

    Baked Potato

    * 1st you want to prep your potatoes. You're basically making a baked potato. Take your potatoes (russet) and wash them. Then cover with oil and individually wrap each potato tightly in aluminum foil.

    Bake in the oven at 400 degrees F for about an hour.

    * Once potatoes are soft and cooked completely remove the foil and cut down the middle of each potato, hot dog style. Scoop out the inside of the potato and put into an empty mixing bowl. To the mixing bowl you're going to add 1 stick of unsalted melted butter, tbsp of garlic paste, parsley, 1 tsp onion powder, 1 tsp garlic salt, cooked broccoli, 1/2c grated sharp cheddar cheese, pepper, and 2 tbsp sour cream. Mix together and scoop filling back into potatoes.

    Sauce

    * Add 1 tbsp butter to pan, 1 tsp garlic paste, parsley and melt down. Add about 1cup of heavy cream and let cook for 5 minutes to thicken. Add pepper, onion powder and lawrys seasoning salt to season. Add colby jack cheese (about 1cup) and mix until sauce is thick and consistency you like.

    Chicken

    * I used chicken beasts and cut into cubes.

    Add EVOO and season with parsley, onion powder, garlic powder and adobo. Cooked in a greased pan until done.

    * Add thin layer of sauce on potatoes, then chicken, then sauce again and finally top with more cheese and bake on 125 until cheese is melted.
