Chicken Parm and Subs

Ingredientes

4-5 24 oz jars of siggy select tomato Basil (one garlic Basil was used this time) (3 for 4 subs and 2 for 1lb pasta/4cutlets)

1.5 15oz tubs of Progresso Italian style breadcrumbs

6lb chicken breast

7 large eggs

Flour

Lots of oil!

Dried basil oregano pepper thyme parsley

2lb low moisture whole milk mozzarella

Small tub of locatelli pecorino Romano

6 sub rolls

Instruções

Cutlets

  • SEE “Chicken Cutlets”

Sauce

  • Warm up the two jars of sauce

  • Add a lot of oregano parsley garlic powder

  • Some black pepper salt onion powder (till sweet)

  • Maybe thyme

  • Simmer and reduce

  • Some locatelli pecorino Romano to taste

  • (Like hickory’s sauce)

Assembly

  • sauce cutlet and add motz till covered edge to edge

  • Broil till brown

  • cut and sauce roll

  • Cut broiled cutlet in half and place in roll

  • Wrap in wax paper then aluminum foil

Notas

Pasta sauce came dry (not like Marcelo’s)

Try butter next time

Dad doesn’t use flour!!!!
