1 Medium Onion, diced fine
1 Celery Stalk, diced fine
4 Garlic Cloves, minced
2 T Olive Oil
1 t. Cumin
1 t. Ground ginger
1 t. Paprika
1/2 t. Cinnamon
1/2 t. Coriander
8 c. Chicken stock
1 15 oz. Can garbanzo beans, drained
1/4 c Parsley, chopped
1/4 c Fresh Mint, chopped
1/2 c white rice, uncooked
1-2 c. Shredded chicken
Zest from 1 lemon
Juice from 1 lemon
Instruções
Sauté onion, celery and garlic in large pot 5-6 min. Ensure that garlic doesn’t burn.
Add cumin, ginger, paprika, cinnamon, and coriander. Continue to saute for 2-3 minutes to open up the spices.
Add chicken stock and garbanzo beans, simmer for 30-45 min
Salt and pepper to taste
Add parsley, mint and rice. Simmer for 20 min.
Add chicken, lemon zest and lemon juice.
Serve with mint leaves.
Notas
This soup is an improvised recipe mimicking a beloved soup at Zuzu Cafe in Madison. It can be tinkered with, adding more spice if desired. Serve with warm pita.
