Greek Chicken Flatbread Wraps

Here’s what you need:
1 lb chicken breast
2 tbsp olive oil
1 tbsp Dijon mustard
1 garlic clove, minced
1 tbsp red wine vinegar
2 tsp oregano
1 tsp salt
1 red pepper
4 flatbreads (store bought or homemade)
Avocado Feta salad
2 avocados
1 shallot, sliced
1 tbsp fresh dill
1/2 cup feta
1/2 lemon, juiced
1/4 tsp salt
Tzatziki
3/4 cup greek yogurt
1 tbsp olive oil
1 tbsp lemon juice
1 clove garlic, grated
2 tbsp fresh dill, chopped
1 tbsp fresh mint, chopped finely
1/4 tsp salt
Instruções
To make the chicken, in a large bowl whisk together the olive oil, Dijon, garlic, vinegar, oregano and salt. Add the chicken turn to coat. Set aside in the fridge to marinate for 30 minutes to overnight.
Meanwhile prep the tzatziki by mixing together all ingredients until combined. Keep in the fridge until ready to use.
Once chicken is ready, heat a skillet over medium high and add a drizzle of olive oil. Add the chicken breasts and cook for 8-10 minutes undisturbed then flip and cook another 6-8 minutes until internal temperature reaches 160F. Remove and set aside to rest. In the same skillet, add the red pepper and cook undisturbed for 6-8 minutes until tender and slightly charred. Give them a toss and cook another 1-2 minutes, then remove.
While the chicken rests, make the avocado salad by mixing all ingredients. Then dice the chicken and red pepper into bite size pieces.
Serve each flatbread with a spread of tzatziki followed by the chicken, red pepper and avocado salad. Top with black pepper and a drizzle of olive oil.
