    1 Tosp olive oil

    1 lg. onion diced

    4 garlic cloves, minced

    1 lb. spicy Italian sausage (I used Italian turkey sausage)

    2 14-oz. cans diced tomatoes (in juice) with garlic, oregano, & basil

    1 32 oz. carton of chicken broth

    1 15-oz. cans of canelloni beans, drained

    1 1/2 cups chopped fresh basil, divided

    2 tsp dried oregano

    1 1/2 tsp crushed red pepper if you are NOT using hot or spicy Italian sausage.

    1/4-1/2 cup small elbow macaroni

    1 6 oz. bag fresh baby spinach

    1/2-1 cup Romano Cheese

    1. I used Turkey Store brand hot Italian sausage and I took it out the casing, saute and drain. Saute onion and garlic in olive oil for 5 minutes. Add meat, tomatoes, broth, beans,

    and dried spices. Simmer 15 minutes to blend flavors stirring occasionally. Add pasta and cook until tender but still firm to bite. Before serving, add spinach and cook until just wilted, about 2-3minutes. Mix in basil and add cheese of sprinkle on top. Season ragout with salt and pepper IF NEEDED and ladle into bowls and Serve

    2. with xtra cheese.
