Shoestring Fries

4 russet potatoes
4-6 cups avocado or other high heat neutral oil
Salt, to taste
Flaky sea salt
Fresh parsley, optional for garnish
Slice potatoes into ¼ inch slices then stack and cut into ¼ inch match sticks.Transfer to an ice bath for 10 minutes then remove from water and dry thoroughly with a clean dish cloth or paper towels.
Instruções
Heat oil to 375°F over medium heat in a heavy bottom, deep skillet or dutch oven. You will need about 3 inches of oil. If you do not have a thermometer you will know the oil is ready if it bubbles when you add a fry to the oil.
Prepare a baking sheet with a cooling rack or paper towel lined plate next to your frying station. Fry potatoes until golden brown and crispy, about 5-8 minutes, then transfer to cooling rack and season immediately with a fine sea salt. Note, if the oil is too hot it can bubble over and be dangerous, if it starts bubbing up too much turn the heat down to bring down the temperature.
Once fries have cooled, garnish with a bit of flaky sea salt and fresh parsley.
