French Onion Soup

3 tablespoons Butter
1/2 tablespoons Olive Oil
2 Lbs Yellow Onion (3 onions) Thinly Sliced
1/2 teaspoon Sugar
1/4 teaspoon Salt
1/8 teaspoon Pepper
2 tablespoons All Purpose Flour
6 cups Beef Stock
1 Bay Leaf
8 slices Baguette, Thinly Sliced
4oz Gruyere Cheese, Grated
1/4 cup Parmesan Cheese, Grated
Directions
1. Melt butter in a large Dutch oven over medium heat. Add olive oil, onions and sugar. Cook stirring occasionally, until onions are soft, lightly browned and caramelized, about 30 minutes.
2. Add salt, pepper, and flour, stirring for 1 minute, Stir in beef stock and add bay leaf to pot. Increase heat and bring to a boil. Reduce to a simmer for 30 minutes.
3. Taste and season with salt and pepper to taste.
4. Place sliced Baggett's on a baking sheet under the broiler until brown and repeat on other side about 3 minutes.
5. Spoon soup into 4 oven safe bowls. Place 2 Baggett slices into the soup. Sprinkle cheese mixture on top and place back into the broiler for 2 to 3 minutes, until cheese melted and lightly browned
