Slow-Cooker Banana Bread Oatmeal

2 cups gluten-free rolled oats
4 cups full-fat coconut milk
2 bananas, sliced
1 teaspoon pure vanilla extract
2 teaspoons ground cinnamon
Pink Himalayan salt
2 tablespoons pure maple syrup (omit for pcos friendly)
Directions
In a slow cooker, combine the oats, coconut milk, bananas, and 2 cups of water with the vanilla, cinnamon, and a big pinch of salt.
Stir together, and cook on the low setting for 8 hours.
In the morning, or when it's ready to be served, add the maple syrup to the oatmeal.
Stir to combine and serve warm.
