Cornbread Muffins

Ingredients

1/2 cup butter

1/2 cup white sugar

2 eggs

1 cup buttermilk

1/2 teaspoon baking soda

1 1/2 cups cornmeal

1/2 cup flour

1/2 teaspoon salt

Directions

Preheat over to 375 degrees.

Melt butter and add to sugar in a large bowl. Quickly add eggs and beat until well combined. Add buttermilk and baking soda. Add cornmeal, flour, and salt and mix until few lumps remain.

Pour batter into greased muffin tin. Bake for 17 - 20 minutes. Insert toothpick into center to check if done.
