Lemon and Orange Flan

4 oz digestive biscuits
2 oz butter
1 oz brown sugar
400g condensed milk
Juice and rind of 2 lemons
115ml double cream
1 tin mandarin oranges
Directions
Put 8-9” round tin in the freezer
Crush biscuits in a bag
Melt butter halfway then remove from heat
Add biscuits and brown sugar to the butter and mix
Add base to greased and lined tin, flatten with spoon
Mix condensed milk, lemon juice, rind, and cream and pour into tin
Chill in fridge
Add mandarin slices at time of serving
