Roasted Red Pepper Pasta

Jar of bell peppers*, drained
100ml cream*
Handful of fresh Basil*
1 tsp chilli flakes*
1 tbsp olive oil*
3 garlic cloves*, crushed or chopped
1 onion*, diced
30g parmesan* [optional, but recommended]
Generous pinch of salt & pepper
Pasta*
Directions
1. Cook pasta as per packet instructions.
2. Heat a some olive oil in a pan and fry the onion for 2-3 mins before adding in the garlic for another 2 minutes.
3. Transfer to blender with jar of roasted red peppers, basil, chilli flakes, cream, salt and pepper.
4. Pour back into the pan and keep on a simmer to warm through. Stir through the parmesan if using.
5. Add the pasta straight from the pot and toss through the sauce until completely coated
