1.5 pounds boneless chicken breast or thighs, cubed into 1-inch pieces
3 tablespoons olive oil
3 tablespoons lemon juice
1.5-3 tablespoons harissa sauce
3 teaspoons smoked paprika
1.5 teaspoons dried thyme
1.5 teaspoons garlic powder
0.75 teaspoons ground cumin
0.75 teaspoons onion powder
1/8-1/4 teaspoon cayenne pepper, optional
3 tablespoons honey (for drizzling)
Directions
In a bowl, mix together the olive oil, lemon juice, harissa sauce, smoked paprika, dried thyme, garlic powder, ground cumin, onion powder, and cayenne pepper (if using).
Place the cubed chicken in a resealable bag or a bowl. Pour the marinade over the chicken, ensuring all pieces are well coated. Seal the bag or cover the bowl and refrigerate for at least 1 hour, up to a maximum of 8 hours. 4 hours is the best.
Heat a pan over medium-high heat. Once hot, add the marinated chicken pieces. Sear the chicken, cooking until the pieces are halfway done.
Drizzle in 3 tablespoons of honey over the chicken when you reach the halfway cooking point. Continue to cook until the chicken is fully cooked and has a caramelized coating.
