Cheeseburger Impossible Pie

1 lb ground beef
1 medium onion, diced
6 slices bacon
2 tomatoes
6oz American cheese, about 9 slices
2 eggs
1 1/2 cup milk
1/4 cup (68g) ketchup
2 tbsp mustard
3/4 cup (90g) Bisquick mix (or 3/4 c flour, 1 tsp baking powder, pinch of salt)
Additional ketchup, for serving
Directions
Line a sheet tray with aluminum foil and lay out each slice of bacon so they are not touching. Do not preheat oven, put bacon in and turn to 425°F. Cook for about 15 minutes, checking on the bacon often (no need to flip it), until the strips are crispy. Cooking time depends largely on how quickly your oven heats up and how thick your bacon is. Remove from oven and transfer strips to a paper towel-lined plate. Let them cool slightly, then roughly chop.
Turn oven down to 400°F.
Dice onion. Preheat a large skillet with a splash of oil. Add diced onions, mix to coat with oil. Turn heat up to high, add 1 cup water, and cook covered until water is evaporated. Add ground beef, chop up and mix with onions. Add seasoned salt and pepper. Cook until beef is brown; drain if necessary. Add chopped bacon. Dice both tomatoes and add to mixture. Spray a 9x13 casserole dish with cooking spray, spread half of the meat mixture into pan. Add slices of cheese, cutting them into quarters before spreading out. Spread remaining meat mixture over the top.
In a bowl, whisk eggs, milk, bisquick, pepper, ketchup, mustard. Pour over meat. Use a knife or fork to move the meat around to make sure the liquid reaches the bottom of the pan.
Bake about 25 minutes or until a knife inserted into the center comes out clean.
