Apple and Cheddar Flatbread

Ingredients

Walnuts

1/2 Yellow onion

1 Apple

1 tsp lemon juice

2 tbsp Umami stock concentrate or veggie broth

1 tsp Garlic powder

1 tsp Dried thyme

2 Flatbreads

4 oz. Ricotta cheese

4 oz. White cheddar cheese

Drizzle Honey and Chili flakes

Directions

Oven to 425.

Chop walnuts as needed. Toast if desired.

Cut onion into 1/4 inch strips.

Cut apple into slices.

Lightly oil flatbread and toast.

Heat cooking oil and saute onion, stock concentrate, garlic powder, thyme, and 2 tbsp water until onion is translucent. Add apple and cook about 5 minutes longer.

Mix ricotta with lemon juice and 1 tbsp olive oil. Season with salt and pepper to taste.

Carefully spread lemon ricotta on flatbread. Top with onion and apple mixture, walnuts, and cheese.

Bake until cheese melts.

Drizzle with honey and sprinkle chili flakes to taste.
