Sweet and Tangy Honey Mustard Chicken Pasta

2 chicken breasts (cut into strips)
12 oz pasta (penne or bowtie)
3 tbsp honey
2 tbsp Dijon mustard
2 tbsp yellow mustard
1 cup heavy cream
1/2 cup chicken broth
1/2 cup shredded mozzarella cheese
1 tbsp olive oil
Salt and pepper (to taste)
Fresh parsley (chopped, for garnish)
Directions
Cook pasta according to package instructions. Drain and set aside.
Heat olive oil in a skillet over medium heat. Season chicken with salt and pepper, then cook until golden and cooked through. Remove and set aside.
In the same skillet, whisk together honey, Dijon mustard, yellow mustard, heavy cream, and chicken broth. Simmer for 3-4 minutes.
Stir in mozzarella cheese until melted and smooth. Add cooked pasta and chicken, tossing to coat.
Garnish with parsley and serve warm.
