Chipotle Corn Salsa

Ingredients

24 oz frozen white corn

1/2 cup diced red onion

1 large roasted pablano pepper, peeled, seeded, diced

1-2 diced jalapeño peppers

1/4 cup finely chopped cilantro

1 Tbsp fresh lemon juice

1 Tbsp fresh lime juice

salt to taste

Directions

Roast pablano pepper until skin has black crispy marks on it, then place in a bag or a container and let cool.

Chop all ingredients and mix together.
