Easy Bean and Rice Wraps

2 cups cooked brown rice (see page 6)
2 cups cooked black beans (see page 6), or one 15-ounce can, drained a
⅔ cup Fresh Tomato Salsa (page 26)
3 tablespoons fresh lime juice
½ teaspoon salt, or to taste
1 clove garlic, peeled and minced
3 tablespoons finely chopped cilantro
4 whole wheat tortillas
Directions
1. Combine the rice, beans, salsa, lime juice, salt, garlic, and cilantro in a large bowl.
2. Place 1 heaping cup of the rice mixture in the center of one of the tortillas. Fold the sides in over the filling and roll the tortilla up like a cigar. Repeat for the remaining tortillas.
