Pork Curry

1 kg Pork
½ tsp Turmeric Powder
2 tbsp Coriander Powder
½ tbsp Chilly Powder
1 ½ tbsp Pepper Powder
1 ½ tsp Garam Masala
2 inch Ginger finely chopped or crushed
12 Garlic finely chopped or crushed
2 Green Chilly finely chopped
25 Shallot small size sliced thin
1 Onion medium size sliced long
½ tbsp Vinegar
3 stem Curry Leaves
2 cup Hot Water
3 tbsp Oil (half coconut oil preferred)
¼ cup sliced coconut chunks
2 tsp Salt
Directions
In a pressure cooker, mix pork, turmeric powder, chilly powder, ½ tbsp pepper powder, 1 tbsp coriander powder, 1 tsp garam masala, 1 tsp salt, half of ginger, half of garlic and half of curry leaves.
Rest for 10 minutes, add ½ cup water and mix well.
Cook pork in high heat until first whistle, then medium high for until second and medium until third whistle. Turn off the heat.
In a pan, heat oil and sauté coconut chunks until coconut start to change colour.
Then add rest of ginger, garlic, green chilly, curry leaves and continue sautéing.
Then add shallots and onions.
Sauté until shallots and onions start to turn brown.
Turn the heat down and add rest of coriander powder and garam masala. Sauté until powder is slightly roasted.
Bring heat to medium and add cooked pork into pan and mix well.
Then add rest of hot water, vinegar, 1 tsp salt and bring the curry to boil.
Allow it to cook open for 10 minutes.
Add rest of pepper powder and mix well.
Remove curry from heat and rest for 20 minutes.
Pork curry is ready to serve.
