Sesame Chicken

500g Chicken thigh
1 tbsp minced garlic
2 tbsp light soy sauce
Salt & lack pepper,
1 egg
1 tbsp corn starch
Potato starch
140ml Chicken stock
6 tbsp Light soy sauce
2 tbsp sugar
3 tbsp Ketchup
2 tbsp White vinegar
2 tbsp Sesame oil
2 tbsp Spebels Chilli Oil
Spring onions
1tbsp corn starch +
2 tbsp water

Directions
Marinate your chicken with 1 tbsp minced garlic, 2 tbsp light soy sauce, salt & black pepper to taste, 1 egg and 1 tbsp corn starch. Leave for 10 mins
Coat your marinated chicken with potato starch and double fry till crispy
For the sauce, mix together 140 ml of chicken stock, 6 tbsp light soy sauce, 2 tbsp sugar or stevia, 3 tbsp ketchup, 2 tbsp white vinegar and 2 tbsp sesame oil
Heat up a pan with 2 tbsp Spebels Chilli Oil and fry the white part of spring onions for 30 seconds before adding the sauce mix
Once your sauce comes to a boil, add some corn starch slurry (1 tbsp corn starch + 2 tbsp water)
When your sauce starts thickening, add your crispy fried chicken and sprinkle some roasted sesame seeds
Garnish with spring onions and serve with hot rice
