2 tablespoons sunflower oil
1 teaspoon cumin seeds
1 onion, thinly sliced
1 green chilli, thinly sliced
1 teaspoon salt
1 teaspoon ground turmeric
1 teaspoon chilli powder
1 small cauliflower, cut into small florets
1 red pepper, cored, deseeded and thinly sliced
1 green pepper, cored, deseeded and thinly sliced
1 yellow pepper, cored, deseeded and thinly sliced
1 teaspoon garam masala
1 teaspoon amchur (mango powder)
Directions
Heat the oil in a pan and add the cumin seeds. Once they start to sizzle, add the onion and green chilli and cook over a medium heat for 2–3 minutes until they have softened. Then stir in the salt, turmeric and chilli powder and cook for a few seconds.
Add the cauliflower florets, cover and cook over a medium heat for 5 minutes until they start to soften.
Stir in the peppers, garam masala and amchur. Cover again and cook over a medium to low heat for 5 minutes or until the cauliflower is tender, then serve.
Notes
The soft cauliflower combined with crunchy peppers and basic spices makes this a simple yet stunning sabji, great to serve with any bread or flatbread. You can also use it in a wrap for lunch or enjoy it with some dal such as Sweet and Sour Lentils or curry as part of a leisurely meal.
