Ingredients

DOUGH

2 sticks (226g) cold unsalted butter

2.5 cups (355g) all purpose flour

1 tbsp (15g) granulated sugar

1/2 tsp (3g) salt

5-6 tbsp ice water

FILLING

2.5 lbs (6) Granny Smith apples, peeled cored and sliced

1/2 cup packed light brown sugar

1/4 cup granulated sugar

1/4 cup cornstarch

1/2 tsp salt

1/2 tsp ground cinnamon

1/4 tsp ground nutmeg

1/4 tsp ground allspice

2 tbsp lemon juice

1 tbsp cold butter, cubed

EGG WASH

1 egg

1 tbsp water

Directions

DOUGH

Cut butter into small cubes, place in metal bowl in freezer

In food processor, pulse sugar, flour, salt

Add butter and process 30 seconds until mixture looks like dry crumbles

Add 1 tbsp of water at a time until dough comes together (can pour onto counter)

Quickly knead into smooth ball, cut in half

Wrap each half in plastic wrap

Chill 30 mins or up to 3 days before rolling and filling

Good to roll out after 30 mins, otherwise let sit out for 45 mins to 1 hour

FILLING

Mix apples with toppings until evenly coated

EGG WASH

Mix water and egg

ASSEMBLY

Roll out bottom crust

Fill with filling and dot with cubed butter

Roll out top crust and cut into strips to make lattice shape

Brush with egg wash

Bake for 1 hour 10 mins until filling is bubbly and crust is golden (may need to cover with tinfoil)

Cool at room temp before serving

Plastic wrap in fridge for 3 days
