Crispy Sausage Peanut Noodles

8 Tbsp Peanut Butter
4 Tbsp Soy Sauce
2 Tbsp Sugar
2 Tbsp Apple Cider Vinegar
1 Bunch Of Spring Onions
200g Medium Egg Noodles
6 Sausages/vegetarian sausages
4 Garlic Cloves
1-Inch Piece of Ginger
1 Tsp Chilli Flakes
1 Red Chilli
Vegetable Oil
Directions
Add the peanut butter, soy sauce, sugar, vinegar and 250ml water to a jug and whisk smooth.
Heat a splash of vegetable oil in a large pan over high heat. Add the spring onions and cook (+ optional other vegetables).
Cook sausages in the oven. Dice and add to the pan when ready with garlic, chilli flakes and ginger. Toss 1 minute.
While performing these steps, cook the noodles as per pack instructions.
Add noodles to pan followed by peanut sauce and toss to coat. Garnish with sliced chillis.
