Oyster Rockefeller (Fish Market)
12 Oysters, shucked

Dozen oysters, shucked
-Cheesy Spread-
1¾ cups mayonnaise
2½ cups Parmesan Cheese
2 tablespoons lemon juice
2 tablespoons chopped Italian parsley
-Spinach Mixture-
¾ cup butter
¾ cup flour
1/2 cup whole milk
1/4 cup cream
bacon bits to taste
¼ cup puréed chopped onion pinch of white pepper
1 Ib frozen chopped spinach
Two dashes white pepper
Directions
For Cheesy Spread, combine all ingredients in small bowl
For Spinach Mixture: Put the bacon and the onion in a food processor and process to mince fine.
Thaw spinach, squeeze dry, and chop fine. Melt butter in a skillet, add flour slowly, and mix until smooth. Add puréed onion, bacon and white pepper. Add milk slowly, a little at a time and cook until; the mixture thickens, stirring continuously.
Remove from heat and stir the cream mixture into the finely chopped spinach.
To assemble and serve: Preheat oven to 350 degrees. Remove the oyster and set aside. Place scoop of spinach mixture on bottom of shell and top with oyster. Pop into oven and bake about 5 minutes or until heated through trying not to "cook" the oyster. Top with cheesy mix and BROIL until bubbly and lightly browned.
