1.5 Lbs Chicken Breast
1C Flour
1t Salt
1t Pepper
1T Olive Oil
1T Butter
Juice of 1 Lemon
1C Chicken Broth
2T Capers
Directions
Slice chicken breasts crosswise to make "cutlets" (see https://www.youtube.com/watch?v=cYg5BOTbGME)
Cut cutlets in half for smaller pieces if desired
Put chicken in plastic bag with flour, salt, pepper. Shake until chicken is evenly coated.
Heat large nonstick pan, add olive oil, butter
Saute chicken, flip after 5 minutes (add oil and/or butter if needed)
After 5 further minutes, add lemon juice, capers, broth
(Start pasta if cooking)
Simmer (on low) for 5 minutes, turning chicken to coat with sauce
