Brazilian Cheese Rolls with Green Butter

Ingredients

ROLLS

500 grams tapioca flour

1 cup milk

1/3 cup olive oil

1 tsp salt

2 eggs

200 grams shredded Monterey Jack or mozzarella

BUTTER

Garlic

Parsley

Dill

Directions

ROLLS

Preheat oven to 375 F

Heat milk, olive oil and salt in a small pot until warm but not boiling

Add flour to a bowl

Use a hand mixer to slowly mix in the liquids until there are small chunks. Let cool for 2 minutes

Add eggs and mix for 2 minutes

Add cheese and mix a bit longer

Coat two baking trays with parchment paper

Form balls of dough with wet hands and place on trays

Bake 20 minutes until slightly golden

BUTTER

Mince garlic

Chop parsley and dill

Sauté garlic in butter

Combine with parsley and dill, blend using handheld blender

Transfer to glass bowl and refrigerate until butter solidifies

Mix if greens sink to bottom while cooling
