Ingredients

•2 1/2 pounds chuck roast

•1 (1 ounce) package Carroll Shelby’s Birria Taco Seasoning

•2 teaspoons coarse salt (adjust to taste)

•1 (14.5 ounce) can diced tomatoes

•½ cup water

•18-20 flour or corn tortillas

•Grated cheese (optional)

•Toppings of choice, such as chopped onions, tomatoes and cilantro and crema or sour cream

Directions

1Rub beef with Birria Taco Seasoningand add salt to taste; place in a slow cooker with tomatoes and water, cover and cook on low for 9 hours or high for 4.5 hours.

2When cooked, remove meat and shred; reserve broth in pot.

3Dip each tortilla in broth, then place in a skillet over medium heat. Top with some cheese and beef, then fold, press and cook each side until golden brown.

4Serve tacos with toppings of choice and a bowl of broth on the side for dipping.

Notes

I added a little bit of adobo sauce to bottom of crockpot. 4-5 tablespoons

2.92lbs chuck pot roast

10oz diced tomatoes and green chiles

Low 8 hours was not enough time.

I did 8 hours low, 1 hour stay warm, 2 hours high. The extra make it pull apart way better

Topped with cilantro and onion. Onion was much needed. I should add onion in crockpot next time

Has a lot of potential. Would make again but it was just missing something. I think onion would help make it an 8/10 or higher
