Chicken Green Chili

Ingredients

2 boneless skinless chicken breast

2 cans Canelli Beans, rinsed and drained

1 quart chicken stock

1pkg. Shelby's Chicken Chili Starter

1 yellow onion chopped

1/2 cup Costco Frozen Hatch Green Chili

4 Green New Mexico chilies roasted

1 tbsp Mexican Oregano

1/2 cup low fat sour cream

1/4 cup heavy whipping cream

Directions

Cube chicken breasts and set aside.

Combine beans, chicken stock, Shelby's, chopped onion, Mexican oregano, and both types of chili in slow cooker and cook over low heat for for 3 hours.

Add cubed chicken and cook for an additional 30 minutes.

Meanwhile, combine sour cream, heavy whipping cream, and cilantro in blender and purée until smooth.

Cook brown rice according to package directions.

Place a scoop in the bottom of bowl, top with chicken chill, and then top with an additional tablespoon of sour cream and cilantro
