Cottage Cheese Pistachio Cheesecake Jars

Ingredients

1 cup cottage cheese (I like Good Culture)

1 cup plain greek yogurt (I like Greek Gods)

1/4 cup maple syrup

1/4 cup pistachio cream

2 tsp vanilla bean paste

1 cup simple mills vanilla crackers

1/4 cup pistachios

Pistachio cream

Directions

Add all the filling ingredients (cottage cheese, greek yogurt, maple syrup, pistachio cream, and vanilla bean paste) into a food processor and blend for about 15 seconds—just until smooth. Don’t over-blend or the filling can get watery.

In a separate blender or food processor, pulse the graham crackers and pistachios together until you have a crumbly crust mixture.

Assemble your jars: Add a spoonful of the crust to the bottom of each jar, press it down slightly, then spoon the cheesecake filling on top.

For a cute finishing touch, add some pistachio cream to a small baggie, snip the corner, and pipe a swirl on top of each jar.

Chill in the fridge for at least a few hours, then enjoy!
