Grilled Chicken Variation

3 1/2 Ibs. chicken, rinsed and patted dry
1/4 cup fresh lemon juice
1/4 cup olive oil
21. soy sauce
2 large cloves garlic, minced
1/2 tsp. ground cumin
1/2 tsp. sugar
1/4 tsp. ground black pepper
Directions
• Arrange chicken in a 9X13X2 inch dish. In a small bowl, combine remaining ingredients pour half of the mixture over chicken, cover. Refrigerate chicken at least am hour or overnight. Cover and refriger- ate bowl or remaining mari- nade for basting.
• Drain chicken -discard liquid. Grill chicken on covered grill, skin side down in center of grill with indirect heat over medium coals for 25 minutes. Baste with reserved marinade
• Turn cook 20 - 25 minutes or until no longer pink at bone. Serve with sauces such as the Peanut or Italian Salsa Verde
