Zucchini Appetizer (Mary Bartnik)

3 cups sliced unpeeled zucchini
1 cup Bisquick mix
1/4 cup chopped onion
1/2 cup Parmesan cheese
2 tablespoons parsley
1/2 teaspoon salt
1/2 teaspoon oregano
1 garlic clove, chopped
1/2 cup salad oil
4 eggs beaten
Sliced pepper pepperoni
Directions
Mix Bisquick, onion, cheese, parsley, salt, oregano, and garlic with oil and eggs. Stir in zucchini.
Spread on greased 13x9x2 pan. Add pepperoni.
Bake at 325° for 30 minutes.
