    Instant Pot Cuban Black Beans

    Ingredients

    1 pounds dried black beans

    2 bay leaves

    1 medium onions

    1 green bell peppers

    3 cloves garlic

    1 glug red wine

    1 tbsp sugar (to taste)

    1 tsp white vinegar

    Cumin

    Dried oregano

    Black pepper

    Directions

    Add beans, bay leaves, and fill Instant Pot with water to one quarter (lean toward too much water). Pressure cook for 35 minutes.

    Make sofrito with onions and garlic cooking, reserving pepper. Use more oil than you think you need. Season to taste with cumin, black pepper, oregano, and salt, and cook until browned. Cook garlic until fragrant.

    Once beans are done, check texture and sautee longer if necessary (or pressure cook if they're very hard). Then add red wine, sofrito, bell pepper. Add roughly 1 tbsp sugar and 1 tsp vinegar until the balance is right. Salt to taste. Cook until texture is right
