Scalloped Potatoes

•6 Tbsp butter or margarine
•1/2 Cup Flour/potato starch
•2 yellow onion, chopped
•1/2 Mayonnaise
•3 1/2 Cups chicken broth
•Kosher salt to taste
•9 russets potatoes, peeled and sliced thin
•Fresh ground black pepper
•paprika
Directions
Preheat oven to 350F
Grease a 9x11
Melt butter, add flour stirring constantly.
Add onion, salt, mayo and chicken stock. Stir until smooth, cook until thickened.
Ladle sauce into bottom of dish, spread potato layer-overlapping. Repeat 3x
Bake uncovered for 1.5 hours
