Spicy Penne Rosé with Sausage & Spinach

250 grams penne (or pasta of choice)
2 tbsp extra virgin olive oil
3 garlic cloves (finely chopped)
1 shallot (finely chopped)
4 hot italian sausage
1/4 cup tomato paste
1 cup tomato sauce
1 cup vegetable stock (salted)
3/4 cup heavy cream
1/2 cup water
2 cups spinach (roughly chopped)
3/4 cup mozzarella (shredded)
1/4 cup parmesan cheese (grated)
1/2 tsp red pepper flakes
fresh basil (optional)
Directions
Begin by chopping up your garlic, shallot and spinach. Set aside.
Next, remove the casings from your Italian sausage and break into bite-size pieces. Set aside.
To a large frying pan add your olive oil. Once hot, add your Italian sausage and fry for 4 to 5 minutes, just until the sausage begins to brown.
Add, your garlic, shallot of chilli flakes and sauté on medium heat for 1 to 2 minutes.
Add your tomato paste and sauté on medium heat until it changes to a dark red colour. About 3 minutes.
Add your penne, tomato sauce, stock, heavy cream and water.
Bring to a boil, cover and reduce heat to a simmer and cook on low/simmer until the pasta has cooked and absorbed the liquid. About 10 - 12 minutes.*Tip: make sure you stir the pasta often just to avoid it from sticking to the bottom of the pan.
Turn the burner off, remove the lid, add your spinach and mozzarella and mix well.
Top with fresh basil and grated parmesan.
