Stuffed Peppers

1/2 cup chopped onion
1/4 cup chopped celery and
leaves
2 T.. oil
1 lb. lean ground beef
1/3 cup rice
2 cup tomatoes
1 tsp. salt
1 tsp. chili powder
6 green peppers
1/2 cup grated cheese
Directions
Cook onion and celery in oil.
Add meat and brown. Add
rice, tomatoes, salt and chili
powder. Cook till reduced.
• Pare peppers by slicing in half
lengthwise; remove stem ends
and seeds. Parboil in salted
water 10 minutes; drain and
cool. Stuff with cooked mix-
ture. Place peppers flat in bak-
ing pan. Top with grated
cheese. Bake 30 minutes at
350º. These freeze beautifully.
Add cheese later if freezing
