Spicy Salmon Sushi Bake

Ingredients

4 cups of rice

1 lb of salmon

1 packet of imitation crab (I think it was about 1 lb)

sriracha mayo (or any spicy mayo)

sesame oil

rice vinegar

chili crisp oil

Directions

FOR THE RICE:

we made the 4 cups of rice in the rice cooker

then I added rice vinegar, sesame oil, a little sugar for taste

FOR THE SALMON:

I seasoned the skin and flesh part of the fish with salt, pepper, chili crisp (but you can also season with whatever else you want like garlic or onion powder)

then I put it in the oven at 450 for 20 minutes

FOR THE IMITATION CRAB:

I used the whole packet of crab

I peeled it into strips and then used a scissor to cut it up into smaller pieces

then I added 1 cup (NOT FOUR CUPS WHAT WAS I THINKING) of spicy mayo and mixed it around

I also added salt, pepper, garlic, onion powder, etc. to taste

mixed it around a bit

AFTER THE SALMON IS DONE:

after the salmon is finished cooking, I used a spatula to separate the flesh from the skin and dumped all of the salmon into the bowl with the crab

then I mixed it around until it was all combined

I also added a little cholula hot sauce but that’s because the spicy mayo sucked. I recommend using both a spicy mayo AND a sriracha for extra kick/flavor

FINISHING IT OFF:

so I added enough rice to pack the bottom of the dish

I added rice seasoning on top (I forgot the name of it but it’s in the recipe)

then I added the fish mixture on top

I topped with chopped green onion, more rice seasoning, a little more spicy mayo and sriracha

I also crushed maybe 2 sheets of seaweed on top

then I baked at 450 for 10 minutes and it’s done!!
