Crème Brulee
8 four oz ramekins

1 pint Whipping Cream
1 pint Half & Half
1/2 teaspoon Pure Vanilla
3/4 cup Sugar
8 large Egg yolks
Pinch of salt
Directions
1. In a double boiler add whipping cream, half & half, vanilla, and salt.
2. In a separate bowl mix egg yokes and sugar together until well blended.
3. Add hot cream mixture (just below a boil) to the egg mixture slowly while continuously stirring.
4. Pour into ramekins.
5. Place ramekins into a pan and add hot water 1/2 the way up the sides of the ramekin. Place into oven that's preheated to 300 degrees.
6. Cook for 50 minutes or until firm. Check doneness with a toothpick in the center. Let cool
7. Lightly coat the top of each ramekin with brown sugar and place under the broiler until sugar is caramelized.
8. Serve and enjoy !!
