Smashed Blt Chickpea Pita Recipe

Ingredients

1 can of chickpeas, drained and rinsed

1 tbsp soy sauce

1 tbsp oil

1 tbsp sriracha

1 tbsp maple syrup

2-4 tbsp mayo, plus more for the pitas

Iceberg lettuce, shredded thin

1-2 tomatoes, diced

2-4 pitas, cut into quarters

Directions

In a large bowl, add the chickpeas, soy sauce, oil, sriracha, maple syrup and mix to combine. Take 1/2 cup of the chickpeas and place in the basket of your air fryer. Fry at 450F for 10 minutes, until they get crispy. Set aside.

Add the mayo the large bowl with the remaining chickpeas. Smash with a potato masher and season with a pitch of salt and pepper.

Build the pitas with the smashed chickpeas, lettuce, tomato, more mayo and topped with the crispy chickpeas. Dig in and enjoy!
