◦710g almond flour
◦6g kosher salt
◦500g sugar
◦6g vanilla extract
◦12g almond extract
◦180g egg white
Directions
1. wisk almond flour, sugar and salt
2. wisk egg whites until they hold stiff peak
3. gently fold almond flour mix and egg whites together
4. fold in vanilla and almond extract
5. cover and chill for 1 hour
6. dust work surface with icing sugar
7. roll out dough to 1/4 inch thickness and use round cookie cutter to punch out cookies
8. re roll as many times as necessary to use all of cookie dough
9. Layer between peices of parchment and freeze until needed
