Ingredients

◦3200g Rutabaga, peeled and diced

◦1000g Onion, chopped

◦600g green apple, skin on, chopped

◦4g all spice, whole

◦4g Black Peppercorn

◦3g Clove

◦1200g Sherry Vinegar

◦480g Brown Sugar

◦480g White Sugar

◦30g Salt

Directions

1. Season rutabaga and roast in the oven, about 20-30 minutes.

2. Meanwhile, chop your onion and apple.

3. Make a sachet with spices

4. Combine vinegar and sugars, salt.

5. In a rondeau, saute onions and apples, throw in your sachet. Cook until starting to soften. Add in roasted rutabaga and continue to cook about 10 minutes. Add sherry vinegar mixture and cover with water. Cook until rutabaga can be mashed with a spoon.

6. Blend in vita until smooth
