Salmon with Tomatoes & Capers in a Cast Iron Skillet

Ingredients

• 2 cloves garlic, peeled, chopped

• 1/4 white onion, peeled, chopped (about 1/4 cup)

• 1 container (pint) Wegmans Organic Grape Tomatoes or 1 15 oz can dized tomatoes, drained

• 2 T. Capers

• 2 T. sliced calamata olives

• 2 Salmon Fillets

• 4-6 slices lemon

Directions

1. Preheat oven to 450 degrees. Add garlic, onion, tomatoes, capers, and olives to bowl; stir to combine.

2. Place salmon in cast iron skillet or on foil lined pan. Pour tomato-caper mixture over salmon. Garnish with lemon slices.

3. roast about 30 min, until internal temp reaches 130 degrees.
