Cheera Parippu Curry

½ cup Toor Dal
¼ tsp Turmeric Powder
½ tsp Salt
½ cup Spinach (Leaves finely chopped)
½ cup Grated Coconut
½ tsp Mustard Seed
2 Dry Green Chilly
2 Shallot small sized
¼ tsp Cumin
2 cup Water
½ tsp Chilly Powder
1 tsp Coconut Oil
1 stem Curry Leaves
Directions
Wash and soak dal for at least 10 minutes.
In a pressure cooker, add dal, turmeric powder, chilly powder, salt and 1 cup of water.
Cook for 1 whistle in medium flame.
Meantime, in a mixer blend coconut, shallot, green chilly and ½ cup of water to a fine paste.
Into the cooked dal, add ½ cup of water and spinach, and continue cook for 2 minutes.
Then add coconut mixture and cook for 2 to 4 minutes and remove from flame.
In a small pan, heat coconut oil and allow mustard to splatter followed by dry res chilly split halves and curry leaves. Sauté for few seconds.
Pour the above seasoning into the cook dal and spinach. Close the lid and allow it to rest for 5 minutes.
Ready to serve.
