Cinnamon Rolls

**MIX**
2/3 c. warm water
1 heaping package. yeast
1 tsp. sugar
**
**Scald**
1 cup canned evaporated
milk, ( scalded)
**COMBINE**
6 tbsp. melted butter
1 tsp. salt
1/3 c. sugar
2 eggs, beaten
600 grams AP flour (SIFTED)
(5 cup, plus more flour if needed )
**TOPPING**
melted butter
Cinnamon sugar
Directions
PREHEAT: Bake to 350 degrees. Bake for 40-45 minutes
Center Rack
1**.SCALD: Milk 1 cup evaporated then cool to lukewarm
2.**MIX: and let dissolve water, yeast and sugar
3.**COMBINE: all ingredients, mix until smooth. Turn out on floured board and knead for 5 minutes. Place in greased bowl. Cover and keep in warm place until dough rises about 45 minutes. Punch down, weigh and divide into 2 pieces.
4. **Spread: each piece of dough with softened butter, then sprinkle with 1 tablespoons sugar and 1 tablespoons cinnamon on each piece. Roll each up like jelly roll. With sharp knife cut each roll in 1/2 then in 1/2 again , you have 4 pieces cut each of those in 1/2 you have 8 pieces from each roll . Total from 2 rolls 16. Place in greased 9 inch round pans about 1 1/2 inch deep.
5. **TOPPING: Brush tops with melted butter. Sprinkle with more sugar and cinnamon. Let rise 30 minutes.
Cool on racks.
