Spicy Salmon Bowl

Salmon:
2 filets of salmon
1/2 TBSP onion powder
1 tsp paprika
1 TBSP soy sauce (or coconut aminos)
1 TBSP chili oil
Sushi Rice:
1 cup sushi rice
1 TBSP rice vinegar
1 TBSP maple syrup (or any liquid sweetener)
1 tsp salt
1 cucumper
1 avocado
Kimchi
Green onion
Mayo
Sriracha
Directions
Start by washing your sushi rice, then cook 1 cup according to the package.
While the rice is cooking, get started on the salmon.
Cut both filets of salmon into bite sized cubes.
Transfer salmon to a bowl and add in onion powder, smoked paprika, soy sauce/coconut aminos, and chili oil. Mix until all of the salmon is evenly coated.
Air-fry salmon at 415F for 18-20 minutes.
When the sushi rice is completely done, add in the rice vinegar, liquid sweetener of choice and mix until throughly combined.
Divide rice into 2-3 bowls and to each bowl add salmon, sliced cucumbers, avocado, 1 spoonful of kimchi, and chopped green onion. (If meal prepping this, I suggest adding the cucumber, avocado, and kimchi when serving)
Top when spicy mayo (just combine mayo and Sriracha in a 2:1 ratio) when serving and enjoy!
