Cody’s Dried Chile Salsa

1 Chipotle Chile (Dried)
30 Chile de Arbol (Dried)
3 Guajillo Chile (Dried)
4 Garlic Cloves
1 Sm. White Onion
2 Roma Tomatoes
2 Jalapeños
1 Lime (Juice)
1/4 - 1/2 cup Neutral Oil
Salt to Taste
Directions
1. Remove stems from your dried chiles and boil for 10 minutes.
2. While the chiles are boiling, chop your white onion into fourths, the jalapeños and tomatoes in half and add to a blender along with your garlic cloves, salt, lime juice.
3. Once the chiles are finished, add the solids and enough boiling liquid to smoothly blend.
4. Start the blender on low, slowly increasing to high. Once the solids have come together into a smooth consistency, slowly stream in your oil until emulsified.
5. Pour into a bowl and enjoy! If you prefer your salsa cold, place in a bowl nested into a larger bowl containing ice water until chilled. Alternatively, you can move to storage containers and place in the refrigerator until chilled. Serve on chips, tacos or however you see fit and enjoy!
