MAIN DISH Lasagna Roll Ups

Ingredients

– 12 curly edged lasagna noodles

– 2 cups, ricotta cheese

– A couple handfuls mozzarella

– 1• 10 ounce package, frozen, chopped spinach (well, drained)

– 1/2 cup grated Parmesan

– Salt, pepper, garlic

– 1 pound, Sweet Italian sausage

– My spaghetti sauce

Directions

– Cook or thaw my homemade spaghetti sauce

– Cook Italian sausage, and set aside to cool

– Cook noodles. Drain. Cool. Rub with olive oil.

– Mix cheese, Italian, sausage, and spinach together

– Layer mixture on to cooked noodle. Roll and cut in half.

– Pour sauce in pan halfway

– place rolled noodles in pan curly edge up

– Spray curly edge lightly with Pam

– Bake at 350° for 30 minutes

– Sprinkle mozzarella on top, if desired
