    Dolly's Dixie Fixin's

    Bell Buckle Cafe Meat Loaf

    Ingredients

    2 pounds ground beef

    1 egg

    1/4 cup oatmeal

    1 small onion, diced

    2 cups plus 2 tablespoons ketchup

    3 teaspoons Country Magic, or salt and pepper

    1/4 cup brown sugar

    2 teaspoons Worcestershire sauce

    Directions

    Preheat the oven to 350°F.

    Mix together the beef, egg, oatmeal, half of the onion, 2 tablespoons of the ketchup, and 2 teaspoons of the Country Magic in large bowl. Transfer the mixture to a 9 by 13-inch loaf pan and smooth the top so that it is even. Cover with foil and bake 1 hour.

    Meanwhile, combine the remaining 2 cups of ketchup, the brown sugar, the remaining onion, Worcestershire, and the remaining 1 teaspoon of Country Magic in a bowl and stir to combine thoroughly.

    Uncover and drain off any liquid that has accumulated. Spread the topping over the meat loaf and bake, uncovered, 15 minutes more.

    Dolly says: "Everybody in the Tennessee town of Bell Buckle knows and loves this legendary meat loaf. And they wouldn't think of eatin' it without mashed potatoes, green peas, whole-kernel corn, and a piece of cornbrea. And then there's the sweet tea to wash it all down."
