Ingredients

2 cups cottage cheese

2 large eggs

1/4 cup honey or maple syrup

1 teaspoon vanilla extract

1 cup rolled oats

1 teaspoon baking powder

1/2 teaspoon cinnamon

1 cup fresh or frozen blueberries

1/4 cup chopped nuts (optional)

Directions

Mix Ingredients: In a large bowl, combine cottage cheese, eggs, honey (or maple syrup), and vanilla extract. Stir until smooth.

Add Dry Ingredients: Stir in rolled oats, baking powder, and cinnamon until everything is well combined.

Fold in Blueberries: Gently fold in the blueberries and nuts (if using), being careful not to mash the blueberries.

Prepare Baking Dish: Preheat the oven to 350°F (175°C) and grease an 8x8-inch baking dish with oil or cooking spray.

Bake: Pour the mixture into the prepared dish and spread evenly. Bake for 30-35 minutes, or until the top is golden and set.

Cool and Serve: Allow to cool for a few minutes before slicing. Enjoy warm or at room temperature!
