One Pot Cheesy Chicken Broccoli and Rice Casserole

1 tablespoon olive oil
1 small onion (chopped)
2 chicken breasts (cut into small cubes)
teaspoon salt
1/2 teaspoon black pepper
4 cloves garlic (minced)
2 cup rice (uncooked)
1 cup cream
2 cups water
2 broccoli heads
1 cup cheddar cheese
1 teaspoon dried parsley
1 tablespoon dried thyme
Directions
Using instant pot:
Sauté broccoli on medium and then cover for 3-5 minutes until tender.
Take broccoli out and throw in the onion and diced chicken. Sauté for about 5 minutes while prepping the rest of the ingredients.
Rinse the rice and throw in equal parts rice and water. Add the Better Than Bullion, cream thyme, salt and pepper. Cover and set the IP to 4 and then quick release for 12 minutes.
Once the IP is done, add in the cheese and broccoli. Season to taste and then serve.
