Mussels in Pesto Cream Sauce Recipe

Ingredients

2 lbs of fresh mussels, cleaned and debearded

1/2 cup of pesto sauce

1 cup of heavy cream

2 cloves of garlic, minced

1/2 cup of white wine

2 tbsp of olive oil

Salt and pepper to taste

Fresh parsley, chopped for garnish

Directions

Step 1.1

In a large pot, heat the olive oil over medium heat. Add the minced garlic and cook until fragrant, about 1-2 minutes.

Step 1.2

Add the white wine and bring to a simmer.

Step 1.3

Add the mussels to the pot and cover with a lid. Cook for 5-7 minutes or until the mussels have opened.

Step 1.4

Remove the mussels from the pot and place in a serving bowl. Discard any unopened mussels.

Step 1.5

In the same pot, add the pesto sauce and heavy cream. Stir until the sauce is heated through.

Step 1.6

Pour the pesto cream sauce over the mussels and garnish with fresh parsley.

Step 1.7

Serve hot with crusty bread for dipping in the sauce.
